Hampton Institute Cookbook Serves `a Taste of Freedom'

Summary


The Hampton Institute was established in 1868 in Hampton, Va., at the mouth of Chesapeake Bay. It was one of the first schools open to newly freed slaves, and it was dedicated to training them to teach and lead their people.

Carolyn Quick Tillery wrote "A Taste of Freedom," a cookbook with recipes and remembrances from the Hampton Institute (Citadel Press Books, 2002).
