Years ago Thornton Patberg picked up a USA Today and read a story that basically said it's not smart to eat a brain sandwich. The cholesterol count was astronomical -- around 1,746 milligrams.

Bad news for Patberg, back then a University of Evansville vice president. His weekly lunch partners included business leaders and philanthropists, many of them personal friends and supporters of UE.
